The Street

The Street is the Petri dish of society.

If the roads of a city are its arteries, then the food is its blood.

And if the destiny of a nation depends on how it nourishes itself, then street food is the theater where that destiny plays itself out.

In America we have to broaden our definition of what street food is because FastFood has hijacked that singular pleasure of the city: It’s not sold from carts. But when you walk down a city street and see the thousands of people eating from paper bags and wrappers, just replace those images with food from single vendors to imagine what the real market might resemble.
